Coconut Cashew Granola

With honey and coconut yogurt

Granola is one of my all time favorite snacks and the best topping to yogurt and even ice cream. My grandmother makes her own home made granola and eats it every day for breakfast. Here is my Coconut Cashew Granola!

Ingredients:

  • 4 cups rolled oats

  • 1 cup shredded unsweetened coconut

  • 1 cup chopped cashews

  • 1/2 cup coconut oil

  • 1/2 cup coconut butter

  • 1/3 cup chia seeds

  • 1/3 cup date syrup (or pure maple syrup) 

  • 2 teaspoons vanilla extract

Recipe:

Combine chia seeds, nuts, coconut shreds, and oats in a large bowl

Combine softened oil, coconut butter, date syrup, and vanilla. If the coconut oil or coconut butter are solid microwave for 30 seconds (be careful not to burn)

Pour the liquid mixture over the nuts/oat mixture. Stir until throughly covered.

Pour the granola on to a baking sheet and press the mixture flat.

Bake on 375 for 15-20 minutes (check frequently to make sure the mixture is browning evenly)

Take out, let cool, and enjoy!
